Black Bean & Quinoa Bowl
Not only is this meal super easy to make, but it is also incredibly affordable and can be prepped ahead of time. All you need is a few ingredients and some basic kitchen tools to whip up this quick and healthy meal!

I love a Mexican inspired black bean and quinoa bowl with delicious salsa and cilantro flavors. Whenever I have them, I add avocado for a little extra sass!
Recipe for success:
2 cups cooked quinoa
2 cups black beans
1 cup cherry tomatoes, halved
2 bell peppers, diced
1/2 onion, diced
1/4 cup olive oil
1/4 cup lime juice
2 tsp ground cumin
Salt and pepper to taste
Optional toppings: shredded lettuce, chopped cilantro, guacamole, mushrooms, diced avocado, salsa, sour cream
Directions:
1. Preheat oven to 375°F.
2. In a medium bowl, combine the cooked quinoa with black beans, cherry tomatoes, bell peppers, and onion.
3. In a separate bowl, whisk together the olive oil, lime juice, ground cumin, salt, and pepper. Pour over the quinoa mixture and stir until everything is evenly coated.
4. Transfer the quinoa mixture to a 9x13 inch baking dish and bake for 15-20 minutes or until vegetables are tender.
5. Serve warm in individual bowls or meal prep into individual containers with optional toppings. Enjoy!
