‘Sketti’ Squash & Tomato Sauce

Spaghetti squash, or as we call it ‘sketti’, is such a versatile veggie! It doesn’t have a particularly strong taste, so it absorbs whatever flavor you give it.

But don’t get it twisted, spaghetti squash doesn’t taste like spaghetti noodles. AND THAT IS OKAY- IT ISN’T SUPPOSE TO! Its crunchy, stringy, and delicious. It makes a great side dish or pair it with some extra oomph for a main.

If you want healthy and requiring minimal effort, this spaghetti squash with tomato sauce recipe is the perfect solution. Not only does it come together quickly, but it also provides a generous serving of nutrients and fiber. This meal is sure to make your next meal prep session easier, and you can rest assured that you’re eating well too!


Here’s my recipe:

  • 1 large spaghetti squash 

  • 3 cloves of garlic, minced 

  • 1 small onion, diced 

  • 1 can of diced tomatoes 

  • Salt & pepper to taste 

  • 2 tablespoons of olive oil

  • 1 teaspoon of dried oregano

  • 1 teaspoon of dried basil


Directions:

1. Preheat your oven to 375 degrees Fahrenheit.

2. Cut your spaghetti squash in half and scoop out the seeds. Place it cut side down on a baking sheet lined with parchment paper and bake for 30 minutes.

3. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion, and cook until fragrant and the onions are slightly translucent, about 5 minutes.

4. Add the tomatoes and seasonings, stirring to combine. Simmer for about 10 minutes.

5. When the spaghetti squash is finished baking, remove from the oven and flip over so the cut side is up. Scrape out the flesh of the squash with a fork and add it to the tomato sauce mixture in the skillet. Stir to combine and let simmer for 5 more minutes.

6. Serve warm with freshly grated parmesan cheese, if desired. Enjoy!
