Veggie Freezer Frittatas
Basically everyone needs more veggies in their life. Sometimes eating the daily recommended amounts is so hard! Whether its because we aren’t feeling particularly creative, or because we are just tired of the same old recipe, it can be a challenge for anyone.
Luckily, I have some great news for you! Introducing veggie-filled mini frittatas! These little guys are like bites of heaven, packed with delicious, nutritious veggies that won't make you feel like you're chomping on a carrot stick or eating another roasted brussels sprout (although I do personally love eating both of those!)
These so cute and tiny, and HUGE BONUS - they freeze beautifully!
Here's what you'll need:
A muffin tin (preferably non-stick)
A bunch of veggies (whatever you have lying around will do, but some suggestions include mushrooms, onions, peppers, jalapeno, and spinach)
Some eggs (1 per frittata)
Salt, pepper, and any other spices to taste (garlic? paprika?)
Some olive oil or cooking spray to grease the muffin tin
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Chop up your veggies into small, bite-sized pieces.
3. In a pan, sauté the veggies until they're softened and slightly caramelized. Season with salt, pepper, and any other spices you like.
4. Grease your muffin tin with a little bit of olive oil or cooking spray.
5. Crack an egg into each muffin tin cavity and whisk it up with a fork.
6. Add a spoonful of the sautéed veggies to each muffin tin cavity.
7. Pop the muffin tin into the oven and bake for 10-12 minutes, or until the eggs are set and slightly golden on top.
8. Take the frittatas out of the oven and let them cool for a minute or two before removing them from the muffin tin.
9. Serve them up and enjoy the deliciousness!
If you want to freeze them for later, let them cool and place them in a freezer safe storage container like this one found in my store and when you are ready to eat, wrap it in a damp paper towel and heat it in the microwave for 45 seconds or until warm!
