Pumpkin Zucchini Muffins

Do you love the taste of pumpkin but don't want to be basic with your fall-flavored treats? Are you looking for a way to use up all that zucchini from your garden?

Behold, the magical creation that is pumpkin zucchini muffins! First, grab some pumpkin puree and shredded zucchini (preferably not from the same can). Mix them together in a bowl and tell them to get along because you don't want any drama. 

But wait, there's more! This is where things get wild. Toss in some chocolate chips at the end for that extra oomph (because let's be real, everything is better with chocolate). 


Ingredients

  • 1 3/4 cups all-purpose flour 

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tbsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/2 tsp vanilla extract

  • 1 cup pumpkin puree

  • 1/2 cup shredded and strained zucchini

  • 1/2 cup applesauce

  • 2 eggs

  • 1/2 cup granulated sugar


Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. 

2. In a medium-sized mixing bowl, combine the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves) and set aside. 

3. In a larger mixing bowl, whisk together the pumpkin, zucchini, applesauce, eggs, extract and sugar until well combined. 

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be sure not to over mix the batter, as it can make the muffins tough. 

5. Using a 1/4 measuring cup, spoon the batter into the prepared muffin cups until they're about 3/4 full. 

6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 

7. Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Voila, you have created a masterpiece! These pumpkin zucchini muffins will have your taste buds dancing like it's pumpkin spice season all year round. These muffins are sure to be a big hit, so feel free to share them with family and friends.

Just a note - these muffins are on the lower side for sugar recommended for a typical muffin. If you want some extra sweetness, increase the sugar, add a couple tbsp of honey, or add the recommended chocolate chips!
