Red Lentil Dahl
Today we’re going to cook up a storm with some spicy, scrumptious Red Lentil Dahl – an Indian dish that is sure to tickle your taste buds and leave you craving for more.
If you’re anything like me, learning to cook Indian food was daunting to me because the flavors are so incredible and seemingly difficult to replicate at home.
I never felt like I lived up to the absolutely amazing zest I know Indian dishes can provide.
Until this one.
Ingredients
1 cup red lentils
4 cups vegetable broth
1 cup coconut milk
1 tablespoon oil
1 teaspoon paprika
1 onion, chopped
1 teaspoon ground turmeric
1 tablespoon grated ginger
1 garlic clove, minced
2 tomatoes, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garam masala
Salt to taste
Lime juice
Directions:
Step 1 - In a large pan, heat up the oil and add the garam masala, paprika, onions, ginger and garlic. sauté them for a few minutes until they turn golden-brown.
Step 2 - While onions brown, rinse the lentils under running water and drain.
Step 3 - Add the broth and lentils and bring to a boil. Lower the heat and let the lentils simmer until they are tender and most of the liquid has been absorbed.
Step 4 - Add the chopped tomatoes, coconut milk, turmeric, cumin and chili powder to the pan and stir well. Cover and let it cook for a few minutes until the tomatoes are soft and the spices are well incorporated - another 5-10 minutes.
Step 5 - Add salt, pepper, and lime juice to taste.
One of the best parts about this recipe is that it actually makes a ton! It is perfect for leftovers, including in the freezer!
Typically, I made this to eat half and freeze half in a freezer safe container. I have recommendations for those here! When I am ready to eat it a second time, I will take it out of the freezer the morning before I want it for dinner, letting it thaw in the fridge.
The Red Lentil Dahl pairs perfectly with basmati rice or freshly baked naan.
This dish is so flavorful and really hits the spot when I am graving true Indian food. It is totally vegan, totally delicious!
But, as usual, my recipes are customizable. So If you want some meat? Do it! Want to use chicken broth instead? Have at it! Want to top it with yogurt at the end? Absolutely! Feel like adding more veggies than just the onion? Try some cauliflower, potatoes, carrots, or bell peppers!
