Peanut-Licious Balls

I LOVE peanut butter. By the spoon full. On sandwiches. In smoothies. With my apples/bananas/strawberries/chocolate. You name it.
Today, we're going to make the perfect snack for anyone who loves peanut butter as much as I do - peanut butter balls. These little balls of peanut buttery goodness are perfect for anyone who wants to satisfy their sweet tooth with an easy, prep-and-eat-all-week kind of snack. They're super easy to make!
What you need
1 cup of peanut butter
1/2 cup of honey (or pure maple syrup)
1 1/2 cups of whole oats -1/3 cup of chocolate chips
1 tablespoon of vanilla extract
A pinch of salt (because every recipe needs a little bit of salt)
Instructions:
1. First, mix together peanut butter and honey in a mixing bowl.
2. Then, add in the oats, chocolate chips, vanilla extract, and salt. Mix everything together until it’s evenly combined.
3. Form the mixture into small balls using your hands.
4. Place the balls on a baking sheet with parchment and pop them into the fridge for around 30 minutes to an hour until they're firm.
5. Once the peanut butter balls are firm, take them out of the fridge and admire your sweet, sweet work.
6. Eat them all in one sitting (just kidding - or am I?)
Tips:
-Feel free to customize the recipe to your liking. Add more chocolate chips, less honey, a sprinkle of sea salt on top, or even sprinkle with a tiny bit of powdered sugar at the end!
-Buy good-quality peanut butter. Because when it comes to peanut butter, you get what you pay for. That being said, organic 1 ingredient peanut butter tends to separate from the oil naturally. Give it a REALLLLLY good stir before mixing it into the other ingredients. It also may take longer to set in the fridge!
-These are perfect for a quick snack or for packing in your lunchbox. They hold their shape best when cold, so store them in the fridge and pack them to go all week!
